    Welcome to Annke Community.

    For the DN81R system, the cameras won't have the IP address. If you want to view the cameras, you could use the IP address of the DVR. 

    The Stream Key, also called verification code, is used to encrypt the videos for the cameras. No matter you encrypt the video or not, it has to set up a stream key.

    So - does that mean I *can* access the cameras as if they were IP, by using the address and channel of the DVR?

    Yes, you could access the cameras by using the IP address of the DVR. Here is the instruction as for your reference: https://help.annke.com/hc/en-us/articles/360000252182

    But in this way, you could only access the cameras locally, not remotely.
